My current favourite go to high protein lunch is a garbanzo bean and avocado salad. It is so easy to make and delicious.


1 can of garbanzo beans

1 medium tomato

1 medium avocado


half a cucumber

half a red, yellow or green pepper

a quarter cup alfalfa sprouts

Two leaves of kale

salt and pepper to taste

I chop all the vegetables and add it to the garbanzo beans. Then I add the avocado that is chopped into small cubes and mix it well, letting the avo become soft – using it as salad dressing.
