Quinoa is a great way to add protein to a diet. I recently added this recipe to my quick salad recipes.
1 cup of quinoa (I use Wholefoods Supergrain which contains red and white quinoa as well as millet)
1 cup of fresh kale
one stalk of green onion
1/3 of a block of hemp tofu (I like the herbed version)
half an avocado
pink Himalayan sea salt
Mix it all together and enjoy! This salad makes one serving.
